Greek and Turkish cuisine those are the obvious ones to look for. Happily, from first playing safe with international cuisine, many hotels and restaurants now include Cypriot alternatives on their menus. At the same time, it is as well to see that olive oil is used sparingly (as it is not in the humbler eating places), because an insidious surfeit of this can be responsible for more stomach upsets than are likely to arise from other causes. As it happens, the restaurateurs of Cyprus know all there is to know about the food preferences of Anglo Saxon and other northern races, so that when they provide local dishes these are usually tempered and seasoned to suit foreign tastes.
Restaurants in towns may be chosen from the lists available at Tourist Information Offices, but in country districts it is more fun to experiment. There are any amount of wayside eating places which provide out-of-door terraces shaded by vines, as well as a fascinating glimpse of the comings and goings of local people. Coffee shops provide excellent fare in the form of me, a profusion of local dishes which arrive in rapid succession from the kitchen, and which constitute a hearty meal rather than as titbits eaten with drinks, as is more usual on the mainland of Turkey and Greece. Kebabs, savoury portions of meat grilled over a charcoal fire, are to be found in the most primitive of cafes. For orthodox meals with recognized courses it may be necessary to patronize hotels. Eating places are plentiful because, as on the Continent, eating out is a local habit for families, as well as for professional men and manual workers. It is exceptional to see unescorted women in the restaurants or coffee shops. A comprehensive charge is often made for the main dish inclusive of vegetables and/or salad.
Grapes for breakfast, cut from an overhead trellis, apricots and peaches warm from the sun, figs galore, the rather dull but beautiful pomegranate there is hardly a fruit in the whole world which cannot be cultivated in Cyprus 's varied climate. In fact, fruit and vegetables are so plentiful, and so well spread out throughout the year, that they need no further enumeration. Fish is excellent, but rather scarce (except from the deep freeze), because this part of the Mediterranean is deficient in plankton owing to the very small amount of fresh water which reaches the sea. However, fresh fish is much prized by local people. Mullet the red and the grey variety swordfish, octopus and squid are excellent. Lamb is the best as well as the most common meat, and adapts itself well to cooking with herbs. Paphos is the district for pigs and therefore for pork.
